Ingredients
For the Cocktail
| 1 tbsp | Fig jam |
| 80ml | Dark rum |
| 1/2 | Lemon (juice) |
| 100ml | Belvoir Farm Ginger Beer |
For the Garnish
| 1 per drink | Fresh figs |
| 1 bar | Dark chocolate |
| 50g | Crushed pistachios |
Method
To Make
- Start by preparing the beautiful chocolate covered figs for garnish. Slice a fig in half, dip into melted chocolate, and sprinkle with crushed pistachios. Place on parchment paper and refrigerate.
- Next, add the fig preserves, rum, and lemon juice into your glass and stir.
- Finally, fill the glass with ice, then top with ginger beer and garnish with the chocolate covered fig.
