Perfect for summer parties or St. Patrick’s Day, this easy recipe makes it simple to mix up something truly special.

Ingredients

1/3 cup Water
1 Cucumber, peeled and roughly chopped
1/2 tbsp Fennel fronds
90ml Gin
2 tsp Créme de menthe
To taste Belvoir Farm Sparkling Cucumber and Mint
3 dashes Bitters
1.5 tbsp Fresh mint leaves
To taste Ice

Method

To Make 

  1. In a blender, blend the water, cucumber, and fennel until completely smooth.
  2. Pour through a fine mesh strainer or nut milk bag into a jar, and discard the pulp.
  3. Transfer the green juice to a shaker, and add gin, créme de menthe and the bitters.
  4. Add a few cubes of ice and give the mix a good shake to chill. Pour evenly between three to four chilled glasses, and finish with Belvoir Farm Sparkling Cucumber and Mint in each glass.
  5. Garnish with fresh mint leaves and lime slices. Add more ice cubes if desired.
