Cucumber, peeled and roughly chopped

Créme de menthe

Belvoir Farm Sparkling Cucumber and Mint

Bitters

Fresh mint leaves
1.5 tbsp
Ice
To taste
In a blender, blend the water, cucumber, and fennel until completely smooth.
Pour through a fine mesh strainer or nut milk bag into a jar, and discard the pulp.
Transfer the green juice to a shaker, and add gin, créme de menthe and the bitters.
Add a few cubes of ice and give the mix a good shake to chill. Pour evenly between three to four chilled glasses, and finish with Belvoir Farm Sparkling Cucumber and Mint in each glass.
Garnish with fresh mint leaves and lime slices. Add more ice cubes if desired.
