Raspberry and Lemon Caramelised Banana Split

Our Raspberry & Lemon Caramelised Banana Split is a decadent twist on a classic dessert. Made with Belvoir Farm Raspberry & Lemon Cordial, it brings a zesty, fruity flavour to the rich caramelised bananas and ice cream, creating a fun and indulgent treat.

Ingredients

For the Caramelised Bananas

20g Unsalted Butter
2 Bananas (Cut Lengthways)
50g Caster Sugar

For the Split

3 Scoops Jude’s Vanilla Ice Cream
40ml Belvoir Farm Raspberry & Lemon Cordial
A Handful Fresh Raspberries
A few Lemon
A Handful Chopped Hazelnuts

Method

To Make 

  1. Start by caramelising your bananas. Over a low heat, melt the butter in a small frying pan then add the sugar and leave to melt. Once it starts to bubble and turn a golden colour add the banana halves and cook for 1-2 minutes each side until slightly browned and coated in caramel.
  2. Place two banana halves on either side of each banana split boat, then add 3 scoops of vanilla ice cream.
  3. Top with fresh raspberries and lemon, before drizzling over 20ml Belvoir Farm’s Raspberry & Lemon Cordial.
  4. Finish with a healthy sprinkling of chopped nuts and eat right away.
