Ingredients
| 1/3 cup | Water |
| 1 | Cucumber, peeled and roughly chopped |
| 1/2 tbsp | Fennel fronds |
| 90ml | Gin |
| 2 tsp | Créme de menthe |
| To taste | Belvoir Farm Sparkling Cucumber and Mint |
| 3 dashes | Bitters |
| 1.5 tbsp | Fresh mint leaves |
| To taste | Ice |
Method
To Make
- In a blender, blend the water, cucumber, and fennel until completely smooth.
- Pour through a fine mesh strainer or nut milk bag into a jar, and discard the pulp.
- Transfer the green juice to a shaker, and add gin, créme de menthe and the bitters.
- Add a few cubes of ice and give the mix a good shake to chill. Pour evenly between three to four chilled glasses, and finish with Belvoir Farm Sparkling Cucumber and Mint in each glass.
- Garnish with fresh mint leaves and lime slices. Add more ice cubes if desired.
