Snow White’s Poison Apple Mocktail

You will need…

For the candy apple cups (4 cups)

Large apples

4

Caster sugar

400g

Belvoir Farm Blueberry and Blackcurrant Cordial

30ml

Maple syrup

4 tbsp

Water

150ml

White vinegar

1 tsp

For the Poison Apple Mocktail (1 drink)

Belvoir Farm Sparkling Pink Apple

150ml (adjust based on apple size)

Belvoir Farm Ginger Cordial

15ml

Maple syrup

1 tsp

Fresh lime

A squeeze

Fresh ginger

Small piece

Star anise (to garnish)

Cinnamon stick (to garnish)

1

Vodka (to make it a cocktail)

Method

1.

First make your candy apple cups by, cutting the top off the apples and hollow out the middle.

In a large saucepan, combine the sugar, Belvoir Blueberry and Blackcurrant Cordial, and 100ml of water. Heat until the sugar dissolves, swirling the pan gently.

3.

Add the maple syrup and white vinegar and simmer until the mixture reaches 150°C (hard crack stage). If you don’t have a thermometer, drop a bit of toffee into cold water, it should harden and become brittle.

4.

Turn off the heat and dip each apple into the toffee, then place the apples on baking parchment to cool.

5.

Once they've cooled, make your Poison Apple Mocktail by adding Belvoir Ginger Cordial, maple syrup to your candy apple.

6.

Top up with Belvoir Farm Sparkling Pink Apple.

7.

Add a squeeze of fresh lime and grated ginger and stire.

8.

Garnish with star anise and a cinnamon stick.
