Raspberry and Coconut Matcha Slushie
Our Raspberry and Coconut Matcha Slushie is a refreshing blend of fruity raspberry, creamy coconut, and earthy matcha. Made with Belvoir Farm Raspberry & Lemon Cordial, it’s an easy, energising drink that’s perfect for cooling down on a warm day.
Ingredients
| 2 tsp | Perfect Ted Matcha Powder |
| 60ml | boiling water |
| 50ml | Belvoir Farm Raspberry Lemon Cordial |
| 450g | crushed ice |
| 160g | coconut cream |
| 60g | condensed milk |
| – | Raspberries, for decoration |
| – | Desiccated coconut, for decoration |
Method
To Make
- Start by making your matcha: sieve the matcha into a bowl and add the boiling water. Use the chasen (whisk) to mix the powder and water together in a W and M shape, until well incorporated and frothy on top. Set aside.
- Drizzle 25ml Belvoir Farm Raspberry Lemon Cordial into each glass and set aside.
- In a blender, combine the crushed ice, coconut cream and condensed milk. Blend until you get a slushie texture.
- Divide the coconut slushie between the glasses, then pour over the matcha, sprinkle with some desiccated coconut and a few raspberries then spoon or drink immediately.
